Golden Chiogga, Ace, and Forono Beets
Golden Chiogga, Ace, and Forono Beets

 

  • 1/2 pound of cooked beets
  • 1/4 pound of blue cheese
  • 1/2 celery  branch

Puree all ingredients and serve with raw vegetables and crackers.

( I am curious how this would be if the beets were finely grated and then mixed with the cheese in their raw state)
