Varieties we grow and love:

Broccoli and cauliflower are actually the same genus and species, there’s a lot of cross over…like the Romanesco is in both categories.

  • Amazing, Acadia, Snow Crown – white
  • Cheddar – orange
  • Violet Queen & Graffiti – violet/purple
  • Vitaverde – green
  • Veronica – Romanesco, pointy florets, Fibonacci spiral

Storage

As always, fresh produce is most delicious and nutritious when consumed as close to the harvest date as possible.

Store cauliflower wrapped in a  damp towel in vented bag in coldest part of fridge. The fleece, or curds on the florets does not really like to touch plastic for extended time, but is totally edible, even if discolored. The longer you store any of the cole crops, especially cauliflower, the stronger tasting it will become. When you eat really fresh cauliflower, it will be sweet and delicate tasting.

Cauliflower freezes OK, but it has to be blanched carefully and is better vacuum sealed if possible.

  • salads
  • on the crudite platter – and people will actually eat it because it is delish
  • stir-fry
  • au gratin
  • cheddar cauliflower soup
  • roasted
