A big thank you to CSA customer Debbie who finds our strawberries SO delicious she just had to share a recipe!
Simply scrumptious strawberry frozen yogurt
1 lb fresh strawberries (about 1 quart), or a mix of strawberries and blueberries
3/4 tsp lemon juice
3/4 cup sugar depending on your taste and sweetness of berries
1/2 tsp guar gum (optional – makes final product a little softer)
2 c. plain Greek yogurt
Mash strawberries (or run through food processor) with all ingredients except yogurt. Let stand, stirring occasionally, for at least 10 minutes.
Blend with Greek yogurt in a food processor or blender. Chill thoroughly and process in an ice cream churn according to manufacturer’s instructions. If you don’t have a churn, put in a bowl in the freezer and mix it well by hand or with an electric mixer every 30 minutes until it’s solid.
note — it tastes distinctly better with very ripe CSA strawberries compared to supermarket California berries.
