Celery

Varieties we grow and love:

  • Conquistador – Nice, flavorful variety
  • Golden Pascal – a more golden tinged green stalk, stringless

Storage

As always, fresh produce is most delicious and nutritious when consumed as close to the harvest date as possible.

If not using right away, remove leafy greens at top of stalks. These can be chopped and tossed into soups, your juicer, or even salad. Try chewing one up to make sure it is tender enough for salad. Stalks may be stores in plastic in the coldest part of fridge for a week. Alternately, if you wash and prep celery sticks, store them in glass or plastic with a  little water.

Culinary Info

– can be enjoyed in:

  • soups salads and sautes

Tips for preparing: Cut off leafy tops, cut off bottom about 1/2″ up to release the stalks. Alternately you can pull off stalks to separate. Wash carefully…the stalks tend to collect dirt at the base. You may or may not have strings to peel off.
